A lot has happened between today’s post and the last, including, but not limited to, moving home and changing jobs. So, this is where I pick back up from my last post and dive right into some tasty recommendations
– For lunch today, I made fusilli with spinach, cherry tomatoes and black pepper and spring onion cream cheese. For 1 person, cook 80-100g short pasta to packet instructions, with a little salt added to the water. While that’s cooking, take a small pot or pan and add a generous handful of spinach leaves (washed thoroughly of course), add these with a pinch of salt and a glug of olive oil, and the halved cherry tomatoes. When the veg have gently warmed and reduced in size, add a few black olives and a generous tablespoon of the flavoured cream cheese. Add the cooked pasta and mix. Serve in a big bowl, wrapped up in a fleece blanket with some good music for company.
– Affogato al caffè. Such a simple dessert. Using my trusty moka, I make espresso. If you don’t have one, make some strong coffee in a french press or some very good quality instant. Take two small dessert bowls or cups, add one scoop of vanilla ice-cream and pour a shot of the hot coffee over each. Serve immediately for hot-cold-sweet-bitter combo or leave to sit for a minute for a chilled dessert.
