BRO-DO! BRO-DO! BRO-DO!
To calm down that restless inner child feeling that insists in having dessert for dinner, I give myself soup with tiny star-shaped pasta called stelline. It sounds cute and tastes nice, it’s uncomplicated and puts a smile on my face. Any small pasta shape would work here; raid your cupboard, there’s a chance you’ve some orzo, quadratini or filini behind a family size box of breakfast cereal or a wall of tinned tomatoes.
Stelline in Brodo
Serves 1, to soothe
1 tablespoon olive oil
1 small carrot, finely diced
1 small stick of celery, ribs removed with a vegetable peeler, finely diced
400ml vegetable or chicken hot stock
Finely grated Parmesan-style cheese to serve (optional)
Salt and pepper to taste
Gently sweat the carrot and celery in the olive oil in a small pot. When they’ve a little crunch left, add the stelline. Add the hot stock and serve when the pasta and veggies are cooked to your liking. Add some grated cheese.
